For a summer barbecue meal that really satisfies, try roasting a pork shoulder. It is an inexpensive cut and easy to prepare. Served on homemade dinner rolls with a side of coleslaw and buttered Jersey corn makes for delicious eating!
There are many ways to prepare for baking, but this is what I do:
Begin with a fresh pork shoulder picnic… this one was almost 10 lbs.
After placing on a rack in a heavy roasting pan, using a pastry brush, cover the pork with yellow mustard to help the seasoning adhere. My preference is to lightly season the meat so I keep the quantities smaller than you may like. I made a dry rub of:
1 Tablespoon paprika
3/4 teaspoon garlic powder
1 Tablespoon brown sugar
1 teaspoon salt
After stirring together, pat onto the roast covering all sides

Place in a preheated 250 oven for nine (9) hours. Long and slow roasting makes the meat fall-off-the-bones tender.

I've never tried this! I think my hubby would like it, BUT could I use the crock pot? Would hate to keep the oven on for 9 hours. I'm sure I would forget it was in there!!! Thanks for the recipe!
