Mississippi Sweet Potato Pie

So good! Better than pumpkin pie in my opinion. Mississippi Sweet Potato Pie is amazing and so easy to make.

 Mississippi Sweet Potato Pie


4 ounces butter, softened
2 cups cooked and mashed sweet potatoes
2 cups granulated sugar
1 small can (5 ounces, about 1/2 cup plus 2 tablespoons) evaporated milk
1 teaspoon vanilla
3 eggs, beaten
1 1/2 teaspoons cinnamon
2 8 or 9-inch prepared pie shells, unbaked

Whipped cream (optional)


In mixer bowl, cream butter, potatoes, sugar and evaporated milk until well blended. Add vanilla, eggs, and cinnamon; mix well. Pour into the prepared pie shells. Bake in a 350° oven for about 1 hour, until set. Cool.  Serve with whipped cream, if desired.
To cook sweet potatoes, wash, dry and prick with a sharp knife. Place on a foil-lined baking pan and bake @400F for 45-60 minutes until very tender. Allow to cool and the jackets will slip right off.

I hope I remember where I saw this recipe...pumpkin is good but sweet potato is better!
