Cherry Fudge with Dark Chocolate

Decadent fudge with bits of dried cherries and topped with dark chocolate.

Cherry Fudge with Dark Chocolate
Recipe Source Shugary Sweets

2 1/2 cup white chocolate chips
7-oz jar marshmallow Fluff
12 Tbs butter
1 cup sugar
3/4 cup heavy cream
pinch salt
1 Tbsp cherry flavored gelatin
1/2-3/4 cup dried cherries, cut into smaller pieces
10-oz dark chocolate, melted

In large saucepan, melt butter, sugar, cream and pinch of salt. Bring to a boil over medium high heat. Once boiling, add cherry gelatin. Cook for 5 minutes; remove from heat.

In bowl, combine white chocolate and marshmallow cream. Pour hot mixture over this and stir with a wooden spoon or whisk until smooth and creamy and all chocolate is melted. Fold in dried cherries.

Pour into parchment paper lined 9-inch square pan. Pour melted dark chocolate over cherry fudge and  gently spread over fudge.  Refrigerate until cool and firm. Cut into squares.
