These little cheese tarts have appeared at just about every get-together and occasion since my sister first made them when she was married in the late 60's. We have always made them with a regular graham cracker bottom but this time I changed it up a bit by using crushed chocolate graham crackers. Top with cherry pie filling or any other that you like.
Preheat oven to 375 degrees
Line muffin tins with muffin cups (Makes 24)
Mix together the following ingredients and divide between 24 muffin cups, pressing slightly into paper cup:
1 1/2 cups regular or chocolate graham crackers crumbs
1/3 cup sugar
1/3 cup butter, melted and slightly cooled
2 (8 ounce) packages cream cheese. softened.
1 1/2 cup sugar.
1 teaspoon vanilla
Just out of the oven slightly puffed (they will sink a little as they cool)Topping:
1 (21 ounce) can cherry pie filling or other pie filling
Fill muffin cups with cream cheese mixture. Bake 12-15 minutes. When cool, top with pie filling.
