Bacon Tomato Jam

Our youngest daughter, Abbey, and her boyfriend invited us to dinner at their favorite restaurant where they served a unique condiment with their burgers.  Ryan encouraged me to taste it.  I knew I would be making a sweet Tomato Jam recipe and was excited to also make a savory version.

Bacon Tomato Jam

1/4 lb smoked bacon,
1/2 small onion, finely chopped
1 lb. vine ripened tomatoes, finely chopped
1/4 cup sugar
1/4 cup brown sugar
1/2 tsp kosher salt
1/2 tsp black pepper
1/4 tsp red pepper flakes (more or less to suit your taste)
1/8 tsp allspice
juice of 1 lime

Partially cook bacon in pan; add onions and continue cooking until onions are softened and bacon crisp.  Drain any fat from pan. (I tilted the pan and blotted with a napkin) Add tomatoes, sugars, salt, pepper, red pepper flakes, allspice and lime juice.

Bring to a boil; reduce heat and simmer, uncovered, until very thick and all liquid is absorbed, about 45-60 minutes.

Serve as a condiment for burgers or grilled cheese
Yield: I got three small canning jars, about 1 cup total.  Keep refrigerated and use within a few days.  Freeze extra for longer storage.

I like to serve warm by microwaving for a few seconds before spreading on bun but you can serve cold or at room temp.
