Ranger Cookies for Back-to-School
Waaayyyyy back, when our twin daughters were in preschool, a friend shared this recipe for Ranger Cookies. Now that Ella will be heading off to kindergarten, we made a batch together today. These chewy and crunchy cookies passed her finicky taste-buds even over the fresh bakery cookies from the grocery store.
Ranger Cookies
PRINT RECIPE
1/2 cup butter or margarine
1/2 cup sugar
1/2 cup packed brown sugar
1 eggs
1/2 teaspoon vanilla extract
1 cup flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup quick-cooking oats
1 cup Wheaties cereal
1/2 cup coconut
Preheat oven to 375 degrees
Cream butter and sugars until light and fluffy. Beat in egg and vanilla.
Combine the flour, baking soda, baking powder and salt; add to creamed mixture and mix well. Stir in the oats, cereal and coconut.
Drop by spoonfuls 2 in. apart onto ungreased baking sheets.
Bake 10-12 minutes or until golden brown. Remove to wire racks to cool.
NOTES:
- Sometimes I toss in a small handful of chocolate chips, maybe 1/4 cup.
- I substituted Raisin Bran Crunch for the Wheaties this time and it was great.
- Recipe can be doubled

I've Got Wheels!
Finally. After a long time saving and a long time looking I bought a car.
Its a 2003 Toyota Avalon with decent miles on the odometer.
Not exactly the sporty black baby with moon roof and rumbling varoom I had in mind but still with style.
I opted for sensible, like-new appearance, smooth ride, roomy interior, quiet and good over-all reviews
(but slightly humdrum)
The toothy smiley face is growing on me
The convenience of having a second car and not dropping John off at work to be mobile is very nice.
Still dreaming about my next car though. The really fun one to drive :)
