Reader Problems?

Does this happen to anyone else?

I will have a feeling that I am not seeing all of the blog posts I follow in my Google Reader and then suddenly I will have a full reader with posts from hours to days ago.  I read all of the new posts this morning and then, a short time later, there were 206 posts, some as old as 9 days.  A few have already come through my reader but the others I have not yet seen.

This is not a new problem and has been happening for months now. Totally frustrating! If I haven't been by to visit with you, this is why.
I still have 65 more posts and it is already back to April 26th

Sweetheart Cupcakes for My Sweethearts

Ella (I'm her caregiver) was excited to bring her Disney Princess Cupcakes and more cookbook to show me and she promptly picked out something for us to bake together. Little did we know when making them that Jamie and her family would be spending the day with us.

Jamie needed some rest and was looking for a chance to get out of the house so I told her to gather the kids just as they were, hop in the car and come and spend the day.  Thinking of how to throw together a plan for a houseful of children and remembering that it was Raiders 9th birthday I told the kids we were having a pizza birthday party to celebrate.  A menu of frozen pizza, canned peaches and popped popcorn would have to cover the nutritional chart this day. I even found some cute napkins and cups and no one minded that there were snowmen on them.
I managed to keep the kids entertained and somewhat quiet and Jamie managed a few hours of needed sleep.
Sweetheart Cupcakes

1 pkg, chocolate cake mix , plus ingredients to prepare mix
1 container (16 ounces) vanilla frosting
3 Tbs. seedless raspberry jam

Preheat oven to 350 degrees.  Line 22 standard muffin cups with paper baking cups

Prepare cake mix according to package directions. Spoon batter into prepared muffins cups, filling two-thirds full. Bake about 18 minutes or until toothpick inserted into centers comes out clean.  Cool cupcakes in pans 10 minutes; remove to wire racks to cool completely.

Blend frosting and jam in medium bowl until smooth.  Cut off rounded tops of cupcakes with serrated knife. Cut out heart shape from each cupcake top with mini cookie cutter; reserve cutouts, if desired.

Spread frosting mixture generously over cupcake bottoms, mounding slightly in center.  Replace cupcake tops, pressing gently to fill hearts with frosting.  Garnish with heart cutouts, if desired.


I din't have a container of frosting so I made a batch of cream cheese frosting and then stirred in the jam.

I piped the frosting onto the cupcake bottom and then, after adding the top, I piped into the hole with additional frosting.

I did not have a small heart-shaped cookie cutter so used a round one.  A heart shape would be really cute though.

Apple Pear or Apple Blueberry Crisp

The original recipe calls for apples and pears but since I still have blueberries in my freezer I picked last summer, I thought I would substitute them for the pears.  It was delicious too!
Apple Pear (or Blueberry) Crisp
Original Recipe Source: Ina Garten

2 pounds ripe Bosc pears (4 pears) OR 1 pint blueberries
2 pounds firm Macoun apples (6 apples)
1 teaspoon grated orange zest
1 teaspoon grated lemon zest
2 tablespoons freshly squeezed orange juice
2 tablespoons freshly squeezed lemon juice
1/2 cup granulated sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
For the topping:

1 1/2 cups all-purpose flour
3/4 cup granulated sugar
3/4 cup light brown sugar, lightly packed
1/2 teaspoon kosher salt
1 cup old-fashioned oatmeal
1/2 pound (2 sticks) cold unsalted butter, diced

Preheat the oven to 350 degrees F.

Peel, core, and cut the apples into large chunks. Place the apples and pears in a large bowl and add the zests, juices, sugar, flour, cinnamon, and nutmeg. Pour into a 9 by 12 by 2-inch oval baking dish.

For the topping:

Combine the flour, sugars, salt, oatmeal, and butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed for 1 minute, until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.

Bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve warm with ice-cream.
Ready to go into the oven
