5 Years Old

Happy Birthday, Dear Ella.
It was so special spending the day with you celebrating your 5th birthday!
You picked chocolate cake with chocolate frosting.
So that's what we made.
I sang Happy Birthday to you and you blew out your candles.
Then you wanted to do it again.
So we did.
You wanted to play domino's with your Princess Domino's over and over.
So we did.
You were such a wee one when you first starting coming to my house each week.
We've spent so much time together you're like one of my own.
And you will forever hold a place in my heart!

Honey Cornbread Muffins

Lighter fare is the menu after all of the overindulgence through the holidays.
Today it was a hot bowl of Hamburger Barley Vegetable Soup and these tasty little corn muffins from
Patrick and Gena Neely.
They are sweet and moist and if I'm not careful, I could once again overindulge on these!

Honey Cornbread Muffins

1 cup yellow cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
1/2 cup granulated sugar
1 teaspoon salt
1 cup whole milk
2 large eggs
1/2 stick butter, melted
1/4 cup honey

Special equipment: paper muffin cups and a 12-cup muffin tin

Preheat oven to 400 degrees F.

Into a large bowl, mix the cornmeal, flour, baking powder, sugar, and salt. In another bowl, whisk together the whole milk, eggs, butter, and honey. Add the wet to the dry ingredients and stir until just mixed.

Place muffin paper liners in a 12-cup muffin tin. Evenly divide the cornbread mixture into the papers. Bake for 15 minutes, until golden.
NOTE:  I baked mini muffins for 11-12 minutes and got 3.5 dozen

Cranberry Mold

Cranberry Mold
This recipe shared from my friend, Anne, when our kids were all small, does not require the cranberries to be cooked.  It is tart, sweet and crunchy!

1 bag cranberries (12-oz), finely chopped (I used a food processor)
1 small cherry Jell-O
2 Red Delicious apples, finely chopped
1 cup chopped nuts
1 1/4 cup sugar

Make Jell-O using 1/2 cup boiling water and 1/2 cup cold water. Put in refrigerator to thicken slightly. Fold in remaining ingredients until well blended; spoon into serving bowl or mold.

Refrigerate until firm.

Lovely Gifts

I hit the jackpot this December winning these giveaways!
A beautiful ornament made by Cindy @Letters From Midlife that is perfect on my white and aqua tree along with the cutest little glittered snowman gift card that looks adorable nestled in the tree branches of my family room tree.
I also won a copy of the book, The One Year Uncommon Life Daily Challenge by Tony Dungy and Nathan Whitaker, Tyndale House Publishers from Cindy's other blog, Books and Chocolate.  Sharing this one with my husband and grandson!
The Origami 101 book from Ann @All Things Paper has my paper folding fingers very excited! It comes with a DVD to help with each fold.
I can't count how many times I have already used this AreoPress received from Mari @Once Upon a Plate.  Easy to use and a very smooth cup of coffee.  I couldn't wait to make a cup for my coffee loving/Barista son-in-law.  He had already heard of it and said he wants to get one himself!
