Orange Whipped Sweet Potatoes

I love sweet potatoes just about any way.  Candied are always a highlight at the Thanksgiving table. I think a sweet potato simply baked in its jacket until the sugars ooze out of the cuts then topped with butter, brown sugar, salt and pepper is very close to perfect.  But I really like this recipe for its fluffy orange flavor.

Orange Whipped Sweet Potatoes
adapted from Taste of Home 2002 Book


Ingredients
3 pounds sweet potatoes, scrubbed
1/3 to 2/3 cups orange juice
1/4 cup packed brown sugar
2 tablespoons butter
1/2 teaspoon salt (may need more)
pepper (I like lots)
1/4 teaspoon ground nutmeg

Directions
Bake scrubbed sweet potatoes in 400 degree oven for about 45 minutes until soft. Scoop out of skins when cool enough to handle.
In large mixing bowl, mash potatoes with all the ingredients until fluffy.
Sprinkle with snipped parsley

Happy Thanksgiving Sweetie...
I have never had sweet potatoes mashed, and love adding a little something new to the holiday menu each year. Guess what we will be trying for Christmas? I can't wait.

DH and I usually go out for Thanksgiving. I am not able to handle two holiday meals so close together for such a large group, especially after the 10-12 hour days I work each week.

This sounds like a delicious blend of citrus and sweet potato. Traditionally, my family, especially my daughter, love candied sweet potatoes for Thanksgiving, complete with marshmallow topping, but when I make them for my husband and myself I simply cut them in circles and roast them. They are so good in many different ways!

I can almost taste it! It sounds wonderful! I have three family members with special dietary situations - they can't have some of the things traditionally in recipes for sweet potatoes so we always bake them. I love them baked but would love to try this recipe.

When I first saw the title I thought you were talking about white potatoes --as I often mash them with carrots and they do become orange! Enjoyed seeing the pictures of your weekend with the kiddos! Blessings at Thanksgiving!
