Macaroni and Cheese Casserole

A bowl of warm-your-tummy
on a rainy and blustery day.
Recently requested by Abbey, I made her a big bowlful because I love her and because it makes a mama happy to fill her offspring  with comfort food.
Macaroni and Cheese Casserole
right from the box of San Giorgio Elbow Macaroni

1 package (1 lb. box) San Giorgio Elbows
1/2 cup butter
1/2 cup all-purpose flour
salt (I use 1 tsp.) and ground black pepper to taste
5 cups of milk
4 cups (16 oz.) shredded cheddar cheese

Cook pasta according to package directions.

Heat oven to 350 degrees F.

In a large saucepan over medium heat, melt the butter. Blend in the flour, salt and pepper; gradually stir in the milk. Cook constantly until the sauce begins to thicken and mixture begins to boil.

Slowly add in the cheese, stir until all of the cheese has melted. In a 3 quart casserole dish, stir together the cooked pasta with the cheese sauce.

Bake in a preheated 350 degree oven for 30 minutes or until hot and bubbly.

recipe makes 8 to 10 servings.

If you're in the mood, sprinkle the top with crushed cracker crumbs or slices of American cheese (square cheese, as our parents called it).
Nothing fancy here.
Just creamy, uncomplicated goodness.

This is a perfect simple dish for those days when I don't feel like spending too much time in the kitchen. Looks yummy! I'm sure my toddler will love it.

I found your blog through foodgawker.com, and I made the mac and cheese today for lunch. It was so good. I've tried a lot of home made mac and cheese's, just a few last week that I didn't love. This one was perfect, absolutely simple, easy, and so, so good. I used munster cheese because that's all I had.

There is nothing in the world like 'creamy, uncomplicated goodness'! My 2-year-old grandson LOVES mac n cheese ;) This sounds like a great recipe. I don't think I've seen that brand of pasta here!
