Show and Tell Friday ~ Schnauzer Figurines

Restocking the Rations

I almost always have baked goods in the freezer to pop out and warm each morning for breakfast or after school snack. But with a busy few months these homemade goodies have dwindled. My dear husband, with the sweetest blue eyes, mentioned his disappointment today. So the house was filled again with the homey aroma of blueberry muffins and Banana Bread.

(did I mention that I love this guy?) Following is the recipe for the Blueberry Muffins... they are not fancy but satisfying just the same. The Chocolate Chunk Banana Bread recipe can be found here.
Blueberry Muffins
2 cups all Purpose flour
1/2 cup sugar
3 tsp. baking powder
1/2 tsp. salt
1 tsp. grated lemon or orange peel
3/4 cup milk
1/3 cup oil
1 egg, beaten
1 cup blueberries
optional: cinnamon sugar for sprinkling on top


Heat oven to 400. Grease bottom only of 12 muffin cups or line with paper baking cups. 

In medium bowl, combine flour, sugar, baking powder, salt and lemon peel; whisk well. Set aside.

In another bowl, combine milk, oil and egg; add to dry ingredients all at once; stir just until moistened.

Gently fold in blueberries. Fill cups 2/3 full. If desired, sprinkle a bit of cinnamon sugar on the muffins just before baking.

Bake at 400 degrees for 20 to 25 minutes or until light golden brown. Cool 1 minute before removing from pan.

15. Store to clothes shop: don’t have a favorite (I’m not a shopper)
