A Boy and His Guitar

The J-man has been taking lessons for several months now and wanted to bring his guitar to our house this weekend... so he could practice.

Just looking at these pictures of him as I write this post, I am taken back at how much older he is looking. Why, he didn't look this old just last month... how can he already be going on twelve years old??? Our love for this young man goes way beyond words!

Show and Tell Friday ~ Precious Little Hand

This sweet little plaster hand print belongs to my oldest daughter and was made when she was just in 1st grade (25 years ago). It hung on the wall for many years but is now kept safe on a bookshelf. two years later when my next two daughters were in first grade, the teachers decided the project was too involved and sadly, more plaster hand prints were not to be.

the owner of the above hand also LOVE, LOVE, LOVED this book... It was read countless times in our home... I think I still have it memorized... Dum ditty, dum ditty, dum, dum, dum.

Lemon Tartlets

Lemon Tartlets

Tart Shells:

1/2 cup butter, softened

1/3 cup sugar

1 egg white

1 1/4 cups flour

Filling:

2 eggs

1/3 cup sugar

1 Tbs. butter melted & cooled

2 tsp. lemon zest

3 Tbs. lemon juice

Powdered sugar

Preheat over to 325. Spray 2 mini muffin pans with PAM. In mixer bowl, beat butter and sugar until light and fluffy. Add egg white; blend well. add flour; mix just until well blended. Divide into 24 pieces and drop into muffin cups. Press into tart shells.

For filling, lightly whisk eggs. Whisk in sugar and butter, lemon zest and juice. Mix well. Pour filling evenly into tart shells.

Bake 20-22 minutes or until edges are light golden brown. Remove pan to cooling rack for 5 mins. Remove from pan and cool completely. Store tightly covered in refrigerator. Sprinkle with powdered sugar before serving.

YIELD: 24 tartlets at 90 calories each

Spring Cleaning

On tap for today... This is where I start... finished up the wood last night (although I wish we had a bit more cause it's still chilly). Now for ceilings, walls, floors, washing slip covers, curtains, pillows, cushions, windows...

See this little fella? He does NOT like the vacuum and will be quite vocal about it :) I just love that mean looking face he's sporting. He acts like such a toughie but he is sweet as pie under that curmudgeon exterior. A dog only a mom could love.
