Zucchini Cake

Almost twenty-eight years ago I was in my cousins wedding. Along with the invitation I sent blank recipe cards in hopes of gathering a collection of tried and true recipes for the bride as she began her new life. This recipe came from the grooms Aunt Mary. It came with no instructions - just ingredients. I simply add them all together and mix! It is a dense, rich cake and very moist!

Zucchini Cake 
4 eggs
2 cups sugar
1 cup oil
2 cups flour
1 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
2 tsp. cinnamon

Add:
2 cups grated zucchini
1 cup nuts
8 oz. can crushed pineapple, drained
2 tsp. vanilla.
Bake at 350 for 1 hour 10 minutes

Looks yummy...AGAIN!! All your recipes look great. Do you have them kept somewhere here on your blog so when I get inspired or have 10 zucchini all at once, I can come here and look them up?? Or are you going to make me write them all down? Just kidding. Hope you have a wonderful day. Like your new profile picture!
