As you may have guessed, the name for this blog comes from one of my favorite Christmas movies, Muppet's Christmas Carol. The story of a changed heart and a second chance echo's the message of hope we can have through Christ. I love Michael Caine's portrayal of Scrooge. A Thankful Heart

Baking Day

good smells coming from the kitchen today...

Tassies
Makes 4 dozen

2 cups sifted flour

2 3-ounce pkg cream cheese, softened

1 cup unsalted butter, softened

Pecan Filling (recipe follows)

Cream flour, cream cheese and butter. Wrap in plastic and chill. Shape into walnut sized balls. Press each ball into an ungreased mini muffin pan cup, onto bottom and sides. Fill each cup with Pecan Filling. Bake in preheated 350 oven for 25 minutes. Cool. Store in refrigerator.

Pecan Filling

3 Tbs. unsalted butter, melted

3 large eggs, lightly beaten

2 cups light brown sugar

1 cup chopped pecans

1 tsp. vanilla

1/4 tsp salt.

In a mixing bowl, stir together all ingredients just until smooth. Use as directed for Tassies.
